Dad, this is for you

On November 18th, 1976 my Dad passed away. Not a day goes by that I don't think of him. It's hard to believe so much time has passed and he's missed so many great things. I have the hope however that he actually has been able to see our families and smile down on us and maybe even say a prayer or two for us! What I loved about Dad: His optimism, his great smile! How he could fix anything, his poems, his wonderful sense of humor, his love for his kids and his belief that we could acomplish anything in this world...He loved poetry, his guitar, singing, Christmas, fishing, photography, any new technology, hunting, books, his kids and I think most of all: My Mom...
Love ya Dad and miss you always...

ohhhhh, touch my heart! That was a beautiful and very special tribute to your dad! There must be something special about the number "8" and precious people going to heaven. My mom died on the 28th. They are probably giggling about something and having tea with my grandmother and your grandparents! Hmmmm, with the way my day went,....we may be joining them soon!!!!

This is Craig.....this was a great tribute to grandpa. Even though I didn't know him, I can imagine he was a great person and was full of life. Thanks for posting this!!

here's the yummy jello recipe! I don't do the frozen strawberries. i actually do fresh raspberries in the jello instead! and sometime I even do raspberry jello. it depends on preference!
make sure your jello is cooled and very slightly congealed before putting it on the cooled cream cheese layer or else it will seep underneath. it is soooooo good.

happy thanksgiving!!! and happy eating!!

2 1/4 c. pretzels
4 tbsp. brown sugar or white sugar
1 1/2 sticks melted butter
1 (8 oz.) pkg. cream cheese
1 c. sugar
1 (8 oz.) Cool Whip
1 (6 oz.) strawberry Jello
2 c. boiling water
2 (10 oz.) pkg. frozen strawberries (or 3 c.)

CRUST:

Combine 2 1/4 c. pretzels, crushed, 4 tbsp. brown or white sugar, and 1 1/2 sticks melted butter. Bake 15 minutes at 350 degrees.

Mix cream cheese, sugar, and Cool Whip until creamy. Spread on cooled crust.

Combine strawberry Jello, boiling water, and frozen strawberries. Let congeal slightly, pour on top, refrigerate.

Kathy,
What an acurate picture of Dad...Mom really appreciated seeing that. It seems like a lifetime ago and actually all of our children's lifetime ago that he lived. But the neatest thing is to look at ourselves and our children and see the qualities he instilled, taught, past on or even shared with his grandchildren that he may have known up there and we now know down here...miss him always, see his touches often, love him forever...thanks
